Ofer Zadikario Simple and mouth-watering homemade fish cakes in tomato sauce Simple and mouth-watering homemade fish cakes in tomato sauce This recipe is so tasty that it’s a really good idea to double or triple the quantities and freeze batches for another day – just make sure you defrost them thoroughly before using, then follow the cooking instructions below. Ingredients 1.5 kg minced fish (forel, Le Brak, or any kind of white fish except salmon) 1 cup breadcrumbs Bunch of parsley Bunch of coriander 2 eggs 4 cloves of garlic 5 teaspoons turmeric 5 teaspoons cumin 1 teaspoon sweet red paprika Salt 1 can of tomato paste (concentrated not crushed tomatoes) Oil for frying (olive oil, canola oil etc.) Mixing bowl Cooking Instructions Mix the minced fish with parsley and coriander. Add the eggs, 3-4 cloves garlic finely chopped, 3 tsp cumin, 2 teaspoons turmeric, salt. Add breadcrumbs gradually. Mix and see that it reaches the right solid texture (be careful not to add too many bread crumbs). Prepare medium-sized balls and pat to flatten. Heat the oil (just enough that it reaches halfway the height of the fish cake) in a large flat pan. When oil is nice and hot put in the fish cake and fry for about a minute and a half on each side or until golden. Remove the fish cake and put it on a plate with some paper towel to soak the excess oil. When all the fish cakes have been made, pour out some of the oil from the pan leaving just a little. Add tomato paste and water to come halfway to the height of the fish cake. Add salt, a teaspoon of cumin, a teaspoon of turmeric, and a teaspoon of sweet paprika. When it begins to bubble, return the fish cakes to the pan, cover and cook on a low heat for about five to ten minutes. Remove and serve with lovely vegetables or a cool crisp salad.
